Ingredients for the miso broth:

- 1 small onion
- 1 liter of water
Ingredients for the soup:
- 1 block of firm tofu, cut into cubes
- 1 spring onion, cut into fine rings
- 3–5 g dried wakame seaweed
- 3 shiitake mushrooms (fresh or dried)
- 1 pack of udon noodles
- 2 teaspoons toasted sesame seeds (for serving)
To taste:
- chili flakes
- Fresh herbs (e.g. coriander or parsley)
- A splash of toasted sesame oil for extra flavor
Preparation:

Prepare shiitake mushrooms:
Soak the shiitake mushrooms in warm water until soft. Then cut into thin strips.

Prepare miso broth:
Roughly chop the onion and simmer in a pot with a liter of water. After 10 minutes, stir in the miso paste.

Add tofu, spring onion, wakame seaweed and shiitake mushrooms. Add udon noodles and simmer for another 5 minutes.
