Our recipe – seasonal, sustainable, delicious!
Ingredients for 2 servings:
- 250 g gnocchi
- 100 g fresh kale
- 1 small onion
- 55 g dried tomatoes (preserved in oil)
- 40 g mushrooms (approx. 2–3 pieces)
- 10 g pine nuts (approx. 1 tbsp)
- 1–2 tablespoons olive oil
- salt and pepper to taste
- A pinch of nutmeg
- A pinch of cumin (optional)
Preparation:
- Roast pine nuts:
- Roast the pine nuts in a pan without oil until golden brown. Set aside.

- Prepare kale:
- Remove the hard stems from the kale, wash it and tear it into 1-2 cm pieces.
- Blanch in a pan of boiling salted water for 3-5 minutes, drain and set aside.
- Cutting vegetables:
- Finely dice the onion.
- Clean the mushrooms and cut them into quarters.
- Cut dried tomatoes into thin strips.
- Heat the pan:
- Heat 1-2 tablespoons of olive oil in a large pan.
- Sauté the onions until translucent, then add the mushrooms and dried tomatoes and fry for about 3 minutes.
- Add kale and gnocchi:
- Stir in the blanched kale.
- Cook the gnocchi according to the instructions on the packet (about 2 minutes) or place them directly in the pan to fry them lightly. Mix everything together carefully.
- Season and serve:
- Season with salt, pepper, a pinch of nutmeg and optionally cumin.
- Sprinkle with toasted pine nuts before serving.
